Fabelicious Cooking Classes
Do join us for some fabelicious cooking classes. We have lined up some new weekday and evening classes in April. So those of you who would like to attend cooking classes but are unable to do so for our daytime classes, now you can on Wednesday evenings. A fun way is to get your friends and colleagues together for a class which ends with a sit down meal. And if you do not want a cooking lesson and just want to enjoy a wholesome home cooked meal then do come for a private dinner. The menu can be customised to your needs.
Our next Pulau Ubin class is this upcoming Saturday, 29 March 2008. Don't miss it as we will not be holding an Ubin class in April 2008.
We are also very excited about getting Tayeb who is a brilliant cook, to come conduct a class on Retro Cakes.Those of you who remember Singapore in the 60s will remember the glorious days of 'to die for' cakes from The Adelphi Hotel and Tay Buan Guan in Katong. And Tayed still makes such wonderful cakes. So mark your calendar for a class with him on 19 April 2008.
In the past one month, I have conducted many classes but there was one that was very special. A group of very special girls from a shelter, Sok Sabay in Cambodia, came for a cooking class to learn to bake chocolate brownie and cupcakes. I don't know who had more fun, the girls or my team from Cookery Magic! Coriander
Coriander herb is also known as Chinese Parsley and Cilantro. It is one of my favourite herb. If you are a regular at my cooking classes, you will soon learn how much I love this herb. Some people hate it but I love the way it transforms a dish completely and imparts a deliciously warm flavour and fragrance.
All parts of the herb can be used in cooking. The leaves, stems, roots and seeds. The root is an essential ingredient in Thai curries. The seeds of this herb taste and smell nothing like the leaves and it is a main ingredient in Indian curry powder. Dry roasting the seeds enhances its flavour and the aroma released during the roasting is simply intoxicating.
The herb originates from the Meditterranean and is related to the carrot family.The Spaniards took the herb on board their ships when they went on their discovery voyages and introduce it to America where even today it is still a very popular herb. Can you imagine Salsa without coriander!
Its culinary and medicinal use has been documented for over 3000 years and used in Asia, Europe and North Africa. One of the earliest documentation of the herb in found in the Eber papyrus of 1550 BC. It even has a mention in the Bible.
It aids digestion and removes toxins from the body. It has vitamins A, C, E and B6.
